At its core is Head Chef Emanuele Pelonero, whose refined approach proves that simplicity, when done well, can be the most memorable experience of all. Emanuele, you describe Hedonist as “pleasure forward.” What does that look like on the plate?

Pleasure is clarity. We source the best local ingredients and let them speak: clean flavours, perfect seasoning, restraint. If we do our job, the first bite tells you everything.

How does the beachside location shape the menu?

We’re part of a beachside community, so the cooking is bright and relaxed: flame-seared, citrus, silky sauces, crisp textures. It should feel uncomplicated, memorable, and made for sharing.

The flavours of spring?

For me, spring is all about freshness and vibrancy. The new menu highlights seasonal vegetables, delicate herbs and bright citrus notes that bring lightness and energy to the plate. 

I want guests to feel that same sense of excitement when they taste the dishes. I’m also bringing back three desserts, including some of our guests’ favourites. It is a way to celebrate spring while honouring the dishes our regulars love most.

Signature sip to start?

Drinks follow the same philosophy as the food: simple, refined and full of flavour. A Hedonist Margarita or a crisp aperitif sets the tone perfectly, supported by a considered list of wines and spirits.

Monday Pasta, Thursday Steak nights, and early week Happy Hour are local favourites. It's great value, great atmosphere, and the perfect lead into dinner.
