Three Michelin-starred SingleThread prepares to open at Bathers' Pavilion

After months of planning, countless conversations across continents and an extraordinary collaboration between California and Sydney, one of the year’s most anticipated dining events is now just one week away.

From Tuesday 28 July, California's three Michelin-starred SingleThread, recently named joint No.1 restaurant in the world by La Liste, will make its Australian debut with a four-week residency at Bathers' Pavilion, bringing together Australia's finest seasonal produce, Japanese precision and one of the world's most celebrated restaurant experiences.

Over recent months, SingleThread Owner Chef Kyle Connaughton has worked closely with Bathers' Pavilion Executive Chef Aaron Ward to create a dining experience inspired equally by Sonoma County and Balmoral Beach. Together, the chefs have developed a menu that celebrates Australia's winter produce through SingleThread's celebrated Californian-Japanese philosophy, creating something that can only ever exist here, and only for four weeks.

As Connaughton explains:

"Modern fine dining in 2026 is about a sense of place and a sense of time. You should only be able to experience that meal there, at that moment."

That philosophy extends far beyond the plate. Every detail of the residency has been developed in collaboration between the SingleThread and Bathers' Pavilion teams, from the menu and beverage program to the florals, ceramics, artwork and guest experience, creating an immersive dining experience unlike anything previously seen in Australia.

While the full 11-course tasting menu will remain under wraps until opening night, guests can expect an extraordinary expression of Australian winter produce, with dishes including Malted Potato with Sydney Urchin, Leeks and Yuzu Kosho, Westholme Wagyu with Shime Carrot, Caramelised Mugi and Short Rib Jus, and Satsuma Mandarin with California Bay, Sun-dried Olive and Piment d'Ville, offering an early glimpse into the precision, restraint and seasonality that have made SingleThread one of the world's most admired restaurants.

WHAT TO EXPECT

Across four weeks, guests will experience an immersive culinary journey where every detail has been created exclusively for Sydney, including:

  • An 11-course tasting menu by Kyle Connaughton in collaboration with Aaron Ward, showcasing Australia's finest seasonal produce through SingleThread's celebrated Californian-Japanese philosophy.
  • SingleThread's iconic Hassūn, the restaurant's signature opening course and one of the defining symbols of the Sonoma dining experience, making its Australian debut.
  • Abundance, a site-specific installation by Sydney artist Alessandro Ljubicic, inspired by the connection between SingleThread's 24-acre California farm and Balmoral Beach. The work combines large-scale floral sculpture, textiles and more than 20,000 bulbs cultivated specifically for the residency at Rotherwood, Bathers' Pavilion's Southern Highlands farm, transforming the restaurant into a living garden.
  • A world-class beverage program curated by SingleThread Wine Director Chris McFall and Bathers' Pavilion's Tom Sykes, featuring comparative wine flights, Dom Pérignon, Château d'Yquem, IWA Sake and a dedicated non-alcoholic pairing.
  • An exclusive West Coast Pilsner, brewed especially for the residency through a collaboration between Russian River Brewing founder Vinnie Cilurzo and Australia's Mountain Culture Beer Co.
  • Bespoke ceramics, custom crockery sourced from Japan and thoughtfully curated tablescapes that reflect the artistry and hospitality philosophy synonymous with SingleThread.

NEWLY ANNOUNCED: RICHARD GEOFFROY TO HOST AN EXCLUSIVE ONE-OFF LUNCH

Adding to the residency program, Bathers' Pavilion today announces an intimate one-off lunch hosted by Richard Geoffroy, former Chef de Cave of Dom Pérignon and founder of IWA Sake.

On Sunday 9 August, just 10 guests will have the opportunity to join Geoffroy in Bathers' Pavilion's private dining room overlooking Balmoral Beach for an extraordinary afternoon featuring a 10-course SingleThread Residency menu paired with Dom Pérignon, current and library releases of IWA 5 Assemblages and exceptionally rare IWA Reserve sakes, many of which are seldom available outside Japan.

Geoffroy will personally guide every pour, joined throughout the afternoon by Kyle Connaughton, Katina Connaughton and SingleThread Beverage Director Chris McFall, sharing the stories behind the wines, sake and the decades-long friendship that brought this remarkable collaboration to Australia.

With only 10 seats available at $1,250 per person, the lunch represents a rare opportunity to experience the IWA collection alongside its creator.
