Homemade Authentic Pistachio Gelato

Making gelato at home is one of those summer projects that pays off in every scoop, and experimenting with flavours is half the fun. Here at BCHQ, we are absolute suckers for pistachio, so here is a recipe to dive into this season. Pistachio gelato separates the pretenders from the real deal: creamy, nutty and unmistakably Italian with its natural green hue. Summer on the Beaches, in a scoop.

This recipe gets its unmistakable flavour from pure pistachio paste: the real, 100 percent stuff that sets proper gelato apart. Get the paste from a trusted local supplier or try making your own for an even fresher flavour. Makes: 1 litre

Ingredients

2 cups (500 ml) whole milk

1 cup (250 ml) thickened cream

¾ cup (150 g) caster sugar

4 egg yolks

½ cup (120 g) pure pistachio paste

Pinch of salt

Method

Heat milk, cream and half the sugar until steaming.

Whisk egg yolks with remaining sugar until pale.

Temper yolks with warm milk, then return to the saucepan.

Stir on low heat until it lightly thickens and coats the back of a spoon.

Remove from heat, whisk in pistachio paste and salt until smooth.

Strain, then chill completely (overnight gives the smoothest texture).

Churn, or freeze and stir every 30 minutes for 3 hours.

Freeze until scoopable. Creamy, nutty, pistachio flavour.

craft to the Northern Beaches through his much-loved gelato.

His parents, Francesco and Giuseppina, spent 25 years perfecting their recipes at Blue Eyes, their family’s beloved gelato shop near the Trevi Fountain, serving locals and tourists with true Italian tradition.
