Craft, Community and a Great Martini: Noble Craft Distillery

Great spirits start with great instincts. At Noble Craft Distillery, they are made by bartenders who spent years behind the bar before deciding to build one of their own. From small-batch gin distilled on site to a bar and restaurant that feels like the neighbourhood's living room, this is a place where craft and community meet at the same table.

Founded by Amir Halpert and Julian Noble, Noble Craft was built from years of hospitality experience stretching from New York to Sydney, and that background shapes everything. This was never a distillery that added a bar as an afterthought. The two were always meant to be one. Every spirit is distilled in-house with a clear brief: balanced, textural and enjoyable to drink. The flagship gin was nine months in development, tested relentlessly in the format it was always destined for, the martini. "A classic London Dry at heart, but with enough citrus, spice and floral botanicals to make a stirred, super-cold martini feel layered and extremely sippable," says Co-Founder and Distiller Amir Halpert.

"Distilling your own spirits on site and serving them metres away means the guest gets a drink with a stronger sense of provenance and a more memorable experience overall," Amir says. Rossco's Bar, named in honour of a dear friend and mentor, sits within the distillery itself, separated by nothing more than a few steps. Ross was a respected figure in the world of wine who made every room better for being in it. "Naming the bar in his honour felt not just fitting, but essential," Amir says.

The menu leans into pub classics with a Mediterranean influence. "Underneath the tahini, spices and pickles, it's still familiar food, just with some additions and a sense that you're getting something you can't at every other venue on the strip," he says. "We wanted Noble Craft to feel like a community living room. Somewhere you can bring your kids, your dog, your parents and your mates without feeling out of place." The value is real too: bottomless menus, happy hour, kids eat free on Sundays, and 25 dollar burger and drink deals.

Noble Craft offers guided tastings, gin blending sessions and private events for groups of up to 120. Whisky and fruit brandy are quietly maturing in barrels, on their own schedule. "We see Noble Craft as part of Brookvale's next chapter, holding onto that gritty, industrial DNA while giving locals a more grown-up place to eat and drink," Amir says.
